I thought rolling the bacon was a brilliant idea. |

Usually, I don't think homemade salads are quite worth the effort. They not only require a lot of fresh veggies, but also enough chopping and mincing to give any amateur chef Carpal Tunnel. But the fact remains that you can't survive the Ketogenic Diet on meat alone.
Vegetables are a key source of fiber and help keep the metabolism going strong. Otherwise a diet filled with meat and cheese can leave you...uh...backed up. So in an attempt to add more vegetables to my own diet, I threw together a salad that I believe is truly worth the effort. It's got a nice mix of sweet and spicy Keto-friendly ingredients and tastes delicious.
Ingredients
Definitely don't use that whole block of cheese. |
- 8oz (2-3/4 cups) - Raw Spinach Leaves
(Cal: 50, Fat: 0g, Prot: 5g, Net Carbs: 2.5g) - 5 Slices - Turkey Bacon (I use Jennie-O brand)
(Cal: 150, Fat:12.5g, Prot:10g, Carb: 0g) - 1 Cup - Chopped Red Bell Peppers (sweet)
(Cal: 25, Fat: 0g, Prot: 1g, Net Carbs: 6g) - 1 Cup - Chopped Orange Peppers (sweet)
(Cal: 25, Fat: 0g, Prot: 1g, Net Carbs: 4g) - 3 - Chopped Jalapeno Peppers (spicy)
(Cal: 12, Fat: 0g, Prot: 0g, Net Carbs: 1g) - 1/2 Cup - Chopped Red Onion (oniony?)
(Cal: 32, Fat: 0g, Prot: 0g, Net Carbs: 6g) - 1 Cup (85g) - Jonathan's Alfalfa Sprouts(Cal: 30, Fat: 0g, Prot: 0g, Net Carbs: 2g)
- 84g - Sliced Cabot Habanero Cheddar (Spicy/amazing. Use less cheese to save calories)
(Cal: 330, Fat: 27g, Prot: 21g, Net Carbs: 1.5g) - 4 Tablespoons - Newman's Own Lite Italian Salad Dressing
(Cal: 120, Fat: 12g, Prot: 0g, Net Carbs: 2g)
Step-By-Step Directions (Do you really need them for a salad?)
Chopped-up veggies & cheese |
- Toss the spinach leaves into a large bowl
- Chop and mince the crap out of the vegetables (the longest step)
- Cut 3 1-inch blocks of cheddar cheese then chop as necessary
- Toss your veggies, cheese, and sprouts into the bowl
- Cook your 5+ pieces of bacon in a pan/skillet (should only take about 5-10 minutes)
- Toss the bacon on top. Feel free to twist or curl for style points.
- Add the Keto-friendly salad dressing of your choice (I used Newman's Own Lite Italian)
Keto On.
Great looking salad! You take great photos and have something I don't, patience to chop vegetables neatly. Sprouts are the best, not sure I have the gumption to survive three jalapenos. Solid recipe for keto'ers and non-keto'ers alike!
ReplyDeleteGreat Dish!
Thanks, Lawrence. I'm definitely not a food mechanic, so chopping is not easy for me either. But all those peppers were worth it!
ReplyDeleteBacon roll? Don't mind if I do.
ReplyDeleteCheers!
Brilliant!
